I used to be disappointed going out for breakfast.
Too expensive, slightly underwhelming, and never quite as good as you want it to be.
These days, I’d much rather keep it simple at home - coffee, something warm, plenty of flavour and as little washing up as possible. Ideally still in pyjamas.
That’s exactly why Mexican-style breakfasts work so well. A few bold ingredients, a bit of heat and something warm to build around is usually enough to make breakfast feel far more exciting without actually making it complicated.
These are the sort of breakfasts that come together quickly but still feel like you’ve made a bit of an effort.
1. Huevos Rancheros
This is one of those breakfasts that sounds more complicated than it actually is.
Warm tortillas topped with fried eggs and good ranchero sauce already gets you most of the way there.
Then add black beans, lime and maybe some cheese or avocado if you’ve got them nearby.
It’s rich, sharp, warming and filling without feeling too heavy first thing in the morning.

2. Chilaquiles (The Easy Version)
If you’ve got tortilla chips and salsa, you’re basically already making breakfast.
Warm tomatillo salsa or chipotle salsa in a frying pan, toss through tortilla chips and let them soften slightly while still keeping some crunch around the edges.
Top with fried eggs, sliced white onion and sour cream and you’re done.
It feels comforting, slightly chaotic and exactly the sort of breakfast best eaten slowly with coffee.
And importantly, it requires very little actual effort.

3. Spicy Black Beans on Toast
Think of this as the better version of beans on toast.
Warm black beans with garlic, spices or a little chilli oil, then spoon them over good toast and top with avocado and a fried egg.
Finish with hot sauce, chilli crisp or pickled onions if you want more heat and sharpness.
Simple ingredients, but the sort of breakfast that actually keeps you full for hours.

Keep It Simple
These aren’t really recipes you need to follow exactly.
They’re more like starting points.
Use what’s already in the cupboard, keep things relaxed and don’t overcomplicate it.
That’s usually when this kind of food works best.

- eggs

- something spicy
That’s enough to make breakfast feel far more interesting very quickly.
