Ham, Eggs and Spiced Potatoes

Ham, Eggs and Spiced Potatoes

A 15-Minute Boxing Day Breakfast Using Leftover Christmas Ham & Potatoes

There's something particularly satisfying about a proper Boxing Day fry-up, especially when most of the hard work was done the day before.

Crispy leftover roast potatoes, slices of Christmas ham and a couple of fried eggs. It's simple, comforting and exactly the sort of breakfast you want after a busy Christmas Day.

But we're giving this one a little pantry twist.

A sprinkle of Peak & The Pantry Kedgeree Recipe Kit seasoning turns those leftover potatoes golden, fragrant and gently spiced, while a spoonful of Pineapple & Chilli Relish brings a lovely sweet and tangy contrast to the salty ham and rich egg yolks.

No complicated cooking, no starting from scratch. Just a few good leftovers turned into something worth getting out of bed for.

You'll Need

From the pantry

Leftovers & fresh ingredients

  • 300–400g leftover roast or boiled potatoes, roughly chopped

  • 2–4 slices leftover Christmas ham

  • 2–4 eggs

  • Salt and black pepper

To Make

  1. Heat a little oil in a frying pan over a medium-high heat. Add the leftover potatoes and leave for a few minutes without moving them so they develop a lovely golden crust.

  2. Turn the potatoes and add the butter, followed by the Kedgeree seasoning. Toss gently and fry for another minute until fragrant and evenly coated.

  3. Meanwhile, fry the eggs to your liking. I prefer a runny yolk so it mixes into the potatoes.

  4. Divide the crispy potatoes between two plates, add the Christmas ham and fried eggs, and finish with a generous spoonful of Pineapple & Chilli Relish.

Why This Works

Leftover roast potatoes are brilliant for frying because they're already cooked. You can get those lovely crispy edges without spending ages preparing them.

The Kedgeree seasoning adds warmth and spice, making the potatoes taste completely different from Christmas dinner.

And the Pineapple & Chilli Relish is particularly good with ham. Its fruity sweetness and gentle chilli heat cut through the richness of the eggs and salty meat.

It's a proper breakfast made from what's already in the fridge, with a couple of pantry shortcuts doing the heavy lifting.

Best Served With

A strong cup of coffee, plenty of black pepper and absolutely no rush.

If you're feeding a crowd, put the potatoes in the middle of the table and let everyone help themselves.

Easy Swaps

  • Use leftover roast turkey or stuffing instead of ham.

  • Add finely shredded Brussels sprouts or cabbage to the potatoes.

  • Swap fried eggs for poached eggs.

  • Add sliced mushrooms for a more substantial breakfast.

  • Use leftover boiled potatoes if you've run out of roasties.

  • Serve everything in a warm flatbread for an easy Boxing Day brunch wrap.

Warming spices work particularly well. We use the seasoning from our Kedgeree Recipe Kit to give the potatoes a fragrant, savoury flavour.

Can I add leftover Brussels sprouts?

Definitely. Shred the cooked sprouts and add them towards the end of frying so they warm through and pick up a little colour.
