This roasted cauliflower soup keeps things simple. Frozen cauliflower makes it easy enough for midweek cooking, while roasting brings out a deeper, sweeter flavour that feels far richer than the ingredient list suggests.

Roasted Cauliflower Soup

You’ll Need

  • 700g frozen cauliflower
  • 2 tbsp olive oil
  • 2 garlic cloves, unpeeled
  • 1 onion, chopped
  • ½ celery stalk, chopped
  • 800ml chicken or vegetable stock
  • 3 tbsp single cream
  • Salt

To Make

  • Preheat the oven to 210°C.
  • Toss the frozen cauliflower with 1 tablespoon of olive oil and a generous pinch of salt, then spread onto a baking tray. Roast for 25–35 minutes until deeply golden around the edges.
  • Meanwhile, heat the remaining olive oil in a saucepan over a medium heat. Add the onion and celery and cook gently until softened.
  • Add the roasted cauliflower to the pan along with the garlic cloves, squeezing the softened garlic from their skins as you go.
  • Pour in the stock and simmer gently for 15–20 minutes until everything is soft and properly combined.
  • Blend until completely smooth, then stir through the cream and keep warm.
