With Capers, Sour Cream & Soft-Boiled Egg
Some dishes manage to feel quietly impressive without really asking very much of you.
This is one of them.
Warm potatoes dressed while they’re still steaming, rich smoked trout, soft-boiled eggs and plenty of sharpness from lemon and capers - all layered together into something that feels light but still properly satisfying.
The sour cream softens everything, the herbs keep it fresh, and the potatoes carry the dressing in the way only warm potatoes really can.
It works equally well as a slow brunch, easy lunch or the sort of light supper that doesn’t need much else alongside it.

You’ll Need
- 3 new potatoes
- 4 tbsp sour cream
- Zest and juice of ½ lemon
- 4 tbsp All Dressed Up Everyday House
- 1 tin Sea Sisters Smoked Rainbow Trout
- 2 eggs
- 1 tbsp capers, rinsed
- Dill, to finish
To Make
- Bring a saucepan of salted water to the boil and cook the potatoes until tender.
- Drain and halve them while still warm, then toss immediately with the Everyday House Dressing so they absorb the flavour properly as they cool slightly.
- Meanwhile, cook the eggs in boiling water for 6 minutes. Transfer to cold water, peel and halve.
- Mix the sour cream with the lemon zest and juice, seasoning lightly to taste.
- Spoon the lemony sour cream onto plates or a serving platter. Add the dressed potatoes, then flake over the smoked trout.
- Finish with the soft-boiled eggs, capers and plenty of dill.
Serve immediately while the potatoes are still slightly warm.
