Ayam Panggang | Indonesian Roasted Chicken Thighs

Ayam Panggang, also known as Grilled or Roasted Chicken, is a popular Indonesian dish that is often marinated in flavourful spices and then grilled or roasted to perfection. It is typically served with a side of sambal (chili sauce) and steamed rice.

  • Mix half a jar of Turmeric & Lemongrass Paste with 200ml coconut milk and a big pinch of salt.

  • This will cover 500g (about 4) skin-on, bone-on chicken thighs. Marinade overnight, then drain (reserving the marinade) and cook the chicken on 160C fan in the oven for an hour, or on the barbecue low and slow, until tender and charred.

  • Simmer the reserved marinade with any chicken roasting juices for a lovely sauce, seasoning to taste at the end!
