Sea Sisters Smoked Rainbow Trout & Potato Salad with Capers, Sour Cream & Poached Egg

Ingredients
Serves 2
3 new potatoes
4 tbsp sour cream mixed with 1 tsp lemon juice and zest
4 tosp All Dressed Up, Everyday House
Xl tin Sea Sisters Smoked Trout
2 soft boiled eggs, halved
1 tbsp of Perello capers, rinsed dill fronds to garnish
Method
• Cook the potatoes until a fork goes through the largest potato with ease. Once they are cooked, halve and cover with the everyday house and set aside
• Meanwhile boil your eggs, for a soft boiled egg: once your water has reached a roiling boil add two large eggs for 6 minutes.
• Mix the sour cream with lemon juice, zest and season with salt and peppers
• Once all your components are ready its just a case of putting it all together
• Start by spooning the sour cream over 2 plates, then top the potatoes, trout, eggs and garnish with capers and dill
