  • Heat 2 tablespoons of mojo de ajo in a large frying pan over medium heat. Add the cherry tomatoes and season with a little sea salt. Let them cook down for 2-3 minutes until they start to soften and release their juices.

  • Stir in 'nduja, allowing it to melt into the sauce.

  • Nestle the spaghetti into the pan, followed by the bone broth + stock mix.

  • Drop in the Parmesan rind for extra umami. Bring to a boil, then cover and reduce the heat to a simmer. Cook for 6 minutes, stirring occasionally.

  • Remove the lid and gently stir in the spinach. Let them wilt for 3-4 minutes while the liquid reduces.

  • Before serving, stir in the lemon zest and adjust the seasoning.
