What you need
1-1.2kg beef (brisket, chuck or cheeks), 1 marrow or shin bone or oxtail, roasting pan with lid or foil, blender, sieve, 2 tbsp cider vinegar, 4 cloves of garlic, ½ onion, 1 tomato, salt.
Serving Suggestion
Serve with freshly warmed Cool Chile Corn Tortillas, Mexican Oregano (included), diced sweet white onion, lime wedges and Habanero Hot Sauce
